Thai Chicken and Pickled Garlic Pizza

Chris and I definitely view pizza as something that is beyond your basic marinara and mozzarella.  Maybe it’s living in New York and experiencing pies varying from those topped with duck eggs (which our 2 1/2 year old ate, whhhaattt?!) to ones smothered in fontina and brined lemons.  We think of the pizza crust more as a blank canvas that allows our culinary minds to wander.  We love going out for Thai food and this is an easy way to bring those bold, delicious flavors home.  The peanut sauce we made was really delcious and made enough to feed a small army, so we put the remaining sauce in a mason jar (hey, I am a girl, I freaking love mason jars-damn you Pinterest!), and will use it for something like cold sesame noodles or a thai chicken salad during the week.  Happy eating!

  • Homemade or store bought pizza dough
  • 3/4 cup thai peanut sauce
  • 3 Tablespoons olive oil
  • 1 boneless, skinless chicken breasts, cubed
  • 3-4 cloves of pickled garlic, thinly sliced (optional)
  • 1/2 cup shredded carrots
  • 1/2 red onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 shredded mozzarella
  • 2 scallions, chopped
  • Salt and pepper to taste

Preheat oven with the pizza stone (optional) to 450 degrees.

Heat medium-sized saute pan over medium-high heat. Saute onion and pepper in olive oil until softened; set aside.

Add remaining olive oil and chicken to pan, season with salt and pepper. Cook thouroughly and remove chicken to a bowl; toss with 1/4 cup of thai peanut sauce; set aside.

Roll out the pizza dough on a floured surface (further instructions here) and place on pizza peel or cookie sheet. Spread remaining thai peanut sauce on dough. Top with pickled garlic, chicken, onions, peppers, carrots and cheese.

Bake for 12 minutes, check halfway through to ensure it’s cooking evenly; if not, rotate. Remove from oven, top with scallions.
