Beer Marinated Skirt Steak

I didn’t eat red meat sixth grade through sophomore year of college.  It was more of a weirded-out factor for me and I lived in California, where no one blinked if you were a vegetarian.  Then I met Chris.  And that all changed.  Prosciutto, pulled pork, burgers, filets, pork belly, sausage.  The (meaty) list goes on.  So needless to say, some of my eating habits changed, especially when it comes to grilling.

This meal is a quick weeknight solution, with delicious results.

*And bonus points to Chris for grilling out in the rain.  All for the sake of steak!

Beer Marinated Skirt Steak

1 lb. skirt steak

1 cup beer (lager-style)

1/2 cup orange juice

3 Tablespoons soy sauce

1 Tablespoon brown sugar

salt and pepper to taste

Combine ingredients in a large plastic bag and add steak; marinate for at least 30 minutes

Grill on high heat for five minutes per side for medium

Suggested sides: Smashed Salt and Vinegar Potatoes or Sweet Potatoes with Coconut and Graham Cracker Crumble
