Chris and I were just talking about how we want to permanently instill Happy Hour every weekend during the summer.  All you need are some delicious snacks (read: lots and lots of cheese), good company, something sweet and a fun drink.  It’s usually very hot here so no one ever wants to eat a huge feast.  But people always want cheese. Always. We really love having guests over and want to relax and be able to enjoy the  company, so this is a way to entertain low-key.  And let’s get real, as long as you have alcohol, you are most likely a good host in your guest’s eyes.

Mint Mojito (makes 4 servings)

Simple syrup (2 cups sugar, 1 cup water)*

8 mint leaves + extra for garnish

1 cup lime juice (6-8 limes)

1 cup white rum

1 cup seltzer/club soda ice

Simple Syrup: Heat the water and sugar in a saucepan over medium heat, stirring constantly until sugar dissolves

Remove from heat and allow to cool completely

Put mint leaves and lime juice in a quart pitcher and muddle**

Add rum,seltzer and 1 cup simple syrup, stir

Serve over ice and garnish with mint leaves

*You will have leftover simple syrup (great for homemade lemonade!)

**muddle: mashing the ingredients into the bottom of pitcher (in this case, releasing oils for a more intense mint flavor)
