Elvis Cookies

One of the downfalls of having a sweet tooth and knowing how to bake is…having a sweet tooth and knowing how to bake.  Many times, if the urge hits, I’ll just take a look in my (usually stocked) baking cupboard and whip something up.  Last night I saw a commercial with chocolate chip cookies and lo and behold, 20 minutes later I was in the kitchen with my 3 1/2 year old helper, whipping up a batch of those divine Neiman Marcus Chocolate Chip Cookies.  And now I have not been able to stop eating them.  I even brought some to work with the intention of handing them out and they never made it past my fingertips.  I try really hard to live by my mom’s rule that if the end product isn’t directly going to someone else, don’t make it.  Because you’ll eat it.  All of it.  But hey, we are in the middle of a polar vortex and I am comforting myself with cookies.  Don’t judge.  This cookie mash-up combines some absolute loves of mine, peanut butter, bananas and bacon.  So in a nod to “The King” Elvis Presley (who loved those items plus honey on a sandwich, which is killer), these were born out of our kitchen. Brown Sugar Black Pepper Bacon

Brown Sugar Black Pepper Bacon Brunch is one of my absolute favorite things.  And I don’t mean just a favorite meal.  I mean an absolute favorite thing in my life.  What’s not to love?  Sweet and savory.  Loads of alcohol.  Passing desserts off as “brunch” food.  I dig it.

New York also seems to be the unofficial “land of brunch” (I just made that up, so don’t quote me.).  On almost every restaurant menu, they are pushing some sort of brunch option, always complete with free-flowing mimosas.  Just a warning: Free-flowing mimosas on Sunday make for a rough Monday.  Those are my wise words for the month.  Don’t say I didn’t warn you.

Brunch is also one of my favorite times to entertain, which means I have a few favorites that I can always rely on.  The following recipe is one of those and is always a crowd favorite.  As the bacon cools, the sugar starts to caramelize and you get something that is similar to candied bacon.  Meat candy.  You’re welcome. Bacon Snickerdoodle Ice Cream SandwichWe survived the move.  I should make t-shirts with that phrase and sell them on a street corner. I’d make millions.  Because if anyone has ever bought a house, I am sure they feel the same way.  We made it out alive, all while juggling a (crazy) 2 ½ year old, a house-full of stuff to pack/unpack, a damaged roof, rotting walls, work, life, blah blah blah.  And through it all, we managed to cook gourmet meals every single night.  Psych!  We basically subsisted on pizza and take-out for the last two weeks.  So to celebrate our return, we wanted to make something decandently delicious.

Growing up, my household was a snickerdoodle house.  No, that isn’t some weird german line dancing style; it’s the most amazing cookie in the world.  Chocolate chip cookies are a staple in most households, but we didn’t do chocolate chip.  Oh no, our family did these little butter balls rolled in cinnamon and sugar.

To treat ourselves (because really, moving is insanely stressful and we deserve it. Yeah, that’s it.  Totally trying to justify why I ate so many…..), we added another delicious component to these that will blow your mind.  Bacon.  As Chris would say, “the wondermeat”.  I love that man.  Bacon really does make everything better, so why not make something that is already so good, even better?!  Side note: My favorite Halloween pumpkin carving that I have ever done included a notched out picture of a sizzling slice of bacon, along with the words “I (heart) Bacon”.  I have issues.  Major issues.

And to make these butter/bacon/sugary treats even more awesome, we made them into ice cream sandwiches.  Mind blown yet?!  No?  Well make them yourself and prepare to be awed. Continue reading

Sink or Swine: Bacon-wrapped poblano pork burgers

I love pork. I love bacon (who doesn’t). I love burgers. So why not put them all together? And while we’re at it, why not draw a little inspiration from my two-year-old daughter, Ella, and play dress up — because after all, is there anything more appealing than a cured pork belly sweater?

I’ve been searching for an excuse to wrap something in bacon and figured my first foray into the land of pork burgers was as good a time as any. Whenever you make something for the first time it’s always good to have a plan B (hence the post’s title). Luckily we didn’t have to fall back on our barbecue leftovers, because these beasts came out juicy, porky and down right delicious!
